Liege Waffle

INGREDIENTS

Dough

A

48%   120g            2 eggs + full cream milk

100% 250g           German Wheat Type Flour T650

4%      10g              Angel Instant Yeast

4%      10g              Domino Verde

10.2% 2 tbsp         Brown Sugar

5.1%   1 tbsp          Honey

2.5%  1/2 tbsp      Salt

2.5%  1/2 tbsp      Spring R10

28%  70g              Soften Butter

 

C

Assorted seeds of choice

Mochi (Mix & Cook 1 cup of glutinous rice flour, 1/2 cup water, 1/2 cup powdered sugar)

 

METHOD

1.    In a large steel bowl, put in ingredients A. Mix until smooth. 

2.    Slowly incorporate ingredients B. 

3.    Leave it the dough to rest for 15 mins. 

4.    Divide into 6 equal portions, insert mochi round it and leave in fridge to rest overnight. 

5.    Before baking, take out from fridge 1 hour to reach room temperature. 

6.    Coat with assorted seeds and bake in waffle iron.
