Chocolate Lava Hakka Hee Pan

INGREDIENTS

50%    38g     German Wheat Flour Type 550

50%    38g     Glutinous Flour

3.3%   2.5g    Malt 110

20%    15g     Sugar

59%    45g     Water

0.8%   1g       Angel Instant Dry Yeast

7%     5g       Corn oil

0.8%   1g       Baking Powder

          25g     Chocolate Chip (Filling)

Method

  1. Mix all ingredients (except filling) to form a dough and knead until smooth
  2. Divide the dough into 4 equal portions
  3. Wrap 6g of chocolate chips and seal securely to prevent leaking
  4. Shape into a round ball and flatten onto the banana leaf
  5. Proof for 15 min or until dough double
  6. Steam for 15 min. Turn steam off for 3 min. Uncover lid for 3 min and serve
